Shaping kardemummabullar
The knot is the part everyone gets wrong, and most of the advice about it is bakers' lore rather than anything anyone has measured. Here is which is which.
Roll the dough out, butter it, spread the cardamom filling, fold it in three. Cut it into strips. Take a strip, stretch it slightly, twist it, and wind it around two fingers and back through itself so the ends tuck underneath.
That is the whole method, and it is the part of the process that takes longest to get right, because the description above is accurate and completely useless. Everyone's first fifty are bad.
What is actually true
Cold dough is the whole thing.
A folded, buttered sheet only stays layered if the butter stays firm enough to be a separate thing from the dough. Warm and it smears into the flour and you have one homogeneous mass; the layers you carefully folded do not exist any more and the bun bakes up bready. Cold and it stays a sheet of butter between sheets of dough.
Cold also stops the knot untying itself. Dough that has just been stretched is under tension and wants to contract, so a knot tied in warm relaxed dough loosens on the tray and opens in the oven. Time in the cold lets that tension dissipate, and the shape holds.
Both of those are physics I am comfortable stating. The narrow temperature window in which butter is plastic rather than either greasy or brittle is well described in the food-science literature, and it is the same reason croissant lamination has such fussy temperature rules.
What is bakers' lore
This is where the honest thing needs saying, because there is a standard explanation of shaping that gets repeated as though it were established and no evidence appears to stand behind it.
The story is that shaping creates a tensioned skin, that the skin traps gas and pushes the rise upward rather than outward, that over-tightening tears it and lets the gas out, and that under-tightening lets everything spread. Every baker says a version of this. Not one of the sources is anything but another baker. There is no study.
I still shape as though it were true, because it matches what I see on the tray, and craft consensus across a lot of independent practitioners is worth something. It is just not a fact, and I would rather say "bakers find" than dress it up.
One claim is worth dropping altogether: that a tightly-rolled bun bakes up tough. Nothing supports it. Toughness in an enriched bun is far better explained by over-mixing, by a flour that is stronger than the recipe wanted, or simply by baking it too long.
Practically
Cut the strips narrower than you think. A wide strip makes a bun that is mostly dough.
Stretch each strip a little before twisting. A twist in an unstretched strip just deforms the layers instead of turning them.
Two turns is usually enough. Three looks impressive raw and bakes into a lump.
Tuck the end underneath properly, and put the bun on the tray with that tuck at the bottom. If the end sits on top it lifts and burns.
Work in small batches out of the fridge and leave the rest cold. If the dough on the bench has gone soft, stop and put it back. A twenty-minute interruption is cheaper than a tray of buns that unwound.
