About Bröd by the Bay

I’m Gabi. I grew up in Sweden, and I bake in a home kitchen in Port Melbourne. The recipes are my mother’s and my grandmother’s, so the Swedish part is first-hand rather than researched.

When I moved to Melbourne I couldn’t find the bread I grew up eating — dense rye, proper limpa, kardemummabullar that tasted of cardamom rather than sugar. So I started making it. Then people started asking for it.

Bröd means bread. It is one of the first words a Swedish child learns, because there is bread on the table at every meal.

Everything is naturally leavened and fermented overnight. Flour, water, salt, butter, cardamom, time. Small batches, by hand, one person — which sets a real ceiling on how much there is.

Bröd is not open for orders yet. Registration with the council comes first.
